Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

Get the Salmon Marinating

  • Combine garlic, chili, ginger, cilantro, soy sauce, water, and maple syrup in a gallon-sized zip top bag.
  • Add salmon and turn to coat. Squeeze out air, seal bag, and refrigerate for one hour, turning once after 30 minutes.

Prep the Cook

  • Set the oven to broil. Remove salmon from marinade and pat dry with paper towels. Set aside. Transfer reserved marinade to a small heavy-bottomed saucepan

Reduce the Marinade

  • Bring marinade to a boil over high heat, reduce heat to medium, and simmer rapidly until reduced to about 1/4 cup. Set aside until ready to use.

Broil the Salmon

  • Broil salmon two inches from heat source until deep brown on surface and center of filet reads 130degF on instant read thermometer for medium rare, or 140degF for medium, 6 to 8 minutes. Glaze with reduced marinade, and serve immediately.
